When excavating the industrial bakeries at Umm Mawagir (seen here), the team found nearly half a ton of pottery, two large baking ovens, a large stone mortar for husking grain and an assortment of grinding stones for producing flour. The sheer scale of the operation, says John Coleman Darnell, suggests that Umm Mawagir was producing a huge surplus of bread, enough to feed an army of soldiers.
